I have to admit, it took me a long time to start enjoying vegetables. The idea of chewing on overcooked broccoli or brussels sprouts with their strong aroma just didn’t appeal to me. For a long while, I stuck to my favorites, like kale and spinach. However, eating the same vegetables every day eventually became boring.

For a long while, I stuck to my favorites, like kale and spinach. However, eating the same vegetables every day eventually became boring. That’s when I decided to shake things up a bit a few years ago. I needed to find a way to incorporate and actually enjoy a variety of vegetables, and that’s how this recipe became my favorite.
