The original location, which debuted in January 2020, faced challenges due to the timing of the global health crisis and shuttered its doors by December of the same year. Now, with a new franchisee, fresh leadership, and a smaller, more intimate setting, Sam’s is set to make a strong comeback.

New Vision for a Familiar Address

This latest version of Sam’s Southern Eatery will occupy the east side of the building at 6600 W. Central, a cozy section that once housed Green Olive. The move to this smaller space, which seats 30 to 40 diners indoors and features an inviting patio for outdoor dining, reflects a more focused and adaptable approach.

Previously, Sam’s operated on the building’s west side, a larger section that has since become home to Casa Mexicana. The decision to relocate within the building demonstrates franchisee Emanuel Ashiedu’s commitment to tailoring the restaurant experience to community needs while creating a unique identity for this iteration of the eatery.

“We’re excited to bring Sam’s Southern Eatery back to this location,” Ashiedu said. “This time, we’ve refined our approach to ensure a better experience for our guests.”

A Southern Comfort Revival

The menu at the new location will be slightly pared down compared to the Sam’s Southern Eatery at 2706 N. Amidon, which Ashiedu and his brother-in-law Charles Scott opened earlier this year in the former DeFazio’s building. However, fans of southern cuisine can rest assured that the restaurant’s signature dishes—fried catfish, shrimp, Po’ Boys, fried green tomatoes, and more—will still take center stage.

Founded in Shreveport, Louisiana, in 2008, Sam’s Southern Eatery has earned a loyal following for its generous portions, authentic flavors, and affordable prices. The chain now boasts over 50 locations across the United States, with most concentrated in the South.

The new West Central location continues this tradition of delivering hearty, soulful meals, providing a space where families, friends, and food lovers can gather to enjoy a taste of southern hospitality.

The History of 6600 W. Central

The building at 6600 W. Central has seen its fair share of transformations over the years. In 2020, Sam’s first attempt to establish itself here fell victim to pandemic-related challenges. The west side of the building, which housed the original Sam’s, had previously been home to Marco’s Cantina and is now occupied by Casa Mexicana.

The east side, where the new Sam’s will operate, has a more intimate feel and a history of its own. Earlier this year, building owner Sam Eddine—well-known for running Marco’s Cantina—had planned to open Mama Deaux Southern Kitchen in the space but ultimately abandoned the project due to staffing issues.

That’s when Ashiedu and Scott stepped in, seizing the opportunity to lease the space and breathe new life into the Sam’s Southern Eatery brand.

Ashiedu and Scott are no strangers to the restaurant business. The pair currently operate three other Sam’s Southern Eatery locations in Kansas: in Hutchinson, Salina, and Wichita. Their Amidon location has already garnered positive reviews for its flavorful menu and welcoming atmosphere.

The return of Sam’s to West Central marks the duo’s latest effort to expand the brand’s footprint in Wichita. Looking ahead, they have ambitions to open an additional location on the city’s east side.

“When we find the right building, we’ll definitely be out there,” Ashiedu said, emphasizing their vision for continued growth.
