For Breakfast:

We have two great recipes for breakfast and it’s Overnight Oats and Egg Toast! So if you’re ready for these easy recipes to enjoy in the morning or brunch, here’s a rundown of what you’ll be needing and how to make them:

How to make Overnight Oats?

Overnight oats are easy breakfast recipes perfect for when you’re on the go! This is ideal if you want something quick, delicious, easy and filling. All you need is your ingredients, a container with a lid and a refrigerator. Remember to whip these up a night before you’re planning to eat them. 

Ingredients:

  • Rolled oats

  • Milk (Almond or Oat milk will do as well)

  • Greek yogurt (or any yogurt of your choice)

  • Honey (or any sweetener you may have in mind)

  • Fresh or dried fruits and nuts

  • Seeds like chia, flax and so on.

  • Protein powder of your choice (optional)

Directions:

Step 1: First prepare all your ingredients on your kitchen counter. Then get yourself your container and combine your oats, milk and yogurt. Once incorporated add in your honey or any sweetener of your choice.

Step 2: Once incorporated, top that with your fruits, nuts and seeds. After, secure it with a lid and place it in your refrigerator overnight. You’ll have delicious overnight oats by the morning!

How to make Egg Toast?

Egg toast is a very simple yet delicious breakfast recipe that’s also filling, AND you only whip this up are things you already have in your kitchen! This only takes about 10 minutes or less to make so this is perfect for quick bites before you start your day.

Ingredients:

  • Bread (you can go for sliced or any bread you prefer)

  • Eggs (1 or 2 is enough)

  • Salt and pepper (and any other seasoning you’d like)

  • Butter

Directions:

Step 1: Butter your bread and toast it until golden brown. While your bread is in the toaster, whip out your frying pan and make some sunny side-up eggs.

Step 2: Once your toast is done, place it on a plate. Then when your eggs are cooked just how you like them, place them on top of your toasted bread. Then top with some salt and pepper! You can also add in some tomatoes or any other veggies you’d like.

For lunch:

Lunchtime specials for today are a Basil Chicken Sandwich and a Chicken & Onions Caesar Salad! These recipes are simple to make and their ingredients are also easy to find. Something both of these recipes have in common is chicken! So you can make both of these recipes the same day or the next day.

How to make a Basil Chicken Sandwich?

This recipe makes about 6 sandwiches so this is perfect if you’re travelling in a group! This only takes about 15 minutes to prep and make so it’s surely ideal for a quick meal.

Ingredients:

  • Chicken breasts (around 1 pound)

  • Salt and pepper

  • Paprika

  • Olive oil

  • Vinaigrette salad dressing

  • Ciabatta rolls or any bread will do

  • Basil leaves

  • A jar of roasted red peppers

  • Shredded Romano cheese

Directions:

Step 1: Mix the paprika, salt, and pepper in a dish and sprinkle it over the chicken slices. Cook the chicken in 2 tablespoons salad dressing in a nonstick pan over medium-high heat for 4–5 minutes on each side, or until the chicken is no longer pink.

Step 2: Drizzle rolls with the remaining 4 tablespoons of salad dressing. Rolls should have basil leaves on them. Add chicken and red peppers on top. Add a little Romano cheese on top.

How to make Chicken & Onion Caesar Salad?

This recipe makes 2 servings and only takes about 30 minutes to prep and make! This is a delicious recipe that is not only simple to make but also quite filling so this is perfect before a big day of travelling.

Ingredients:

  • Chicken breast (around 1 pound)

  • 1 large sweet onion

  • Small red tomatoes

  • Lemon juice

  • Caesar salad dressing

  • Ground pepper

  • Shredded Parmesan cheese

  • Romaine Lettuce

Directions:

Step 1: Mix the chicken, onion, and two tablespoons of salad dressing in a large bowl and toss to coat. Put the potatoes and two tablespoons of salad dressing in a small bowl.

Step 2: Leave room between each piece of chicken and onion as you alternately thread them onto moistened wooden or metal skewers. Put potatoes onto moistened wooden skewers or separate metal skewers.

Step 3: Cover and cook potatoes for five minutes over medium heat on a grill rack coated with oil. Add the chicken kabobs and cook, flipping the skewers regularly, for 10 to 15 minutes, or until the chicken is no longer pink and the potatoes are soft.

Step 4: Whisk the remaining salad dressing, pepper, and lemon juice in a large bowl. Toss to coat and add the romaine, chicken, potatoes, onion, and cheese.
